A great place to start is a Bible Dictionary. Just look up “Image of God” and read the article or articles that come up. Often times, the dictionary will suggest other articles within the dictionary and will list sources you may want to locate and use.
Since Genesis 1:26-31 and Genesis 2:7-9 are foundational, you can use Commentaries on Genesis as sources.
Do a word study on the word image…Use Strong’s concordance or another concordance. See all the places where the word is used in the OT and NT. The concordance should be listed as a source in your bibliography.
Note the places in the NT (from your word study) where Jesus is called the image of God AND note how we are being created in the image of Christ. This completes the picture of redemption and how sin has distorted the image of God in us but that in Christ we can be recreated in the image of God. USE the NT references and use commentaries on those references.

If you know how to search for Journal articles, those are great sources. Please avoid doing an internet search as the quality of sources will vary.
