Great industry to choose for your capstone, I’m sure I will be following your participation in this forum as I chose the same industry. However, I will be introducing a new “fast-food chain concept and within the category of ethnic. You mentioned, “organizations in this sector are battling with the impact of the covid-19 pandemic” how you would address this ongoing risk on the industry (there will be more viruses and what set KPI’s would you include? I have adopted the “ghost kitchen” concept, to take advantage of the surplus of platforms dedicated to only delivery and its success as a new trend for the industry? U.S. food delivery sales topped $19.4 million in 2019, and Euromonitor recently estimated that ghost kitchens could potentially top $1 trillion in revenue by 2030 (1)
