Calculate • Nanomoles of hydrogen peroxide

  • Millimoles of hydrogen peroxide
  • Kilograms of fat
  • Peroxide Value (PV)
  • o Hint: In SI units, PVSI= (millimoles hydrogen peroxide)/(kg fat)

Draw 3 tables and 2 figures using the given data:

    Tables:

    1. For Standard Curve: Tube number, volume of 90:10 methanol:water, volume of hydrogen

peroxide, volume of Fox reagent, nanomoles of peroxide in each tube, and absorbance

    reading at 560 nm.

    2. For Potato Chip samples: Tube number, Sample type and treatment, replicate number,

absorbance reading at 560 nm, calculated nmol peroxide for each sample, sample weight,

calculated nmol peroxide per gram of chips, and the Peroxide value (in mmolH2O2/kg fat).

    a. If your absorbance values are below the lowest standard absorbance, report the

absorbance value in the table with an asterisk (*). You cannot calculate the final

    nmol, so put “N/A”.

    3. For the Corn Chip samples: Tube number, Sample type and treatment, replicate number,

absorbance reading at 560 nm, calculated nmol peroxide for each sample, sample weight,

calculated nmol peroxide per gram of chips, and the Peroxide value (in mmolH2O2/kg fat).

    a. If your absorbance values are below the lowest standard absorbance, report the

absorbance value in the table with an asterisk (*). You cannot calculate the final

    nmol, so put “N/A”.

    Figures:

    1. Standard curve showing the equation of line and goodness of fit (r2 ).

    2. Bar chart showing the average peroxide value for each chip and treatment (be sure to

    include error bars).
