1. We have considered two directions for food production in the U.S.. One is towards the mass production of standardized food (e.g., the Big Macs, Wonderbread, packaged factory meat, etc.); the other is towards more customized production for niche markets (e.g., varietal chocolate, heirloom potatoes, artisan bread, local and sustainable heritage carrots, etc.). Discuss the social forces behind these two trends — WHY would the production of a food move more in one direction or the other? Be sure to cover factors associated with each part of the course — the culture of food, the economics of food, and the politics of food. And be sure to use examples of particular foods to illustrate the major points of your essay.
2. I argued in class that food tastes and practices could be a way of marking social boundaries and maintaining social inequalities. We saw this most clearly in talking about class differences in the sorts of food people eat, appreciate, and are knowledgeable about. How can this perspective on foodways be used to help understand the U.S. “obesity epidemic?” Be sure to discuss the relevance of social boundaries to both the possible causes of increasing obesity and the ways that the problem is discussed in the media. These are two different issues, and you should be sure to address both.
